How much difference (to a moderate "athlete" like myself, not anyone any good) do 23mm tyres make over 25mm?

    Jules, I think the main difference is that you can see a bit more of the road flying by your front wheel so you feel like you are going faster, which has a knock-on effect and actually makes you go faster. Well its a theory anyway.
